Our Story
The early days were about as DIY as it gets. Founder Mirek Aldridge took a leap on a warehouse in Collingwood and, with the help of family and friends, set about building The Mill from the ground up. In 2017, the doors opened on Sackville Street to The Mill Brewery taproom. With a tiny footprint and a 600-litre brewhouse, The Mill was a long way from where it is today, but the beers quickly found their people.
As demand grew, so did the brewery. In late 2021, we opened a 30-hectolitre production brewery in Thomastown, giving us the capacity to brew more beer and get it into more hands across Melbourne.
In 2024, our Collingwood lease came to an end and we closed the doors to our original home. The Mill continues to brew at full capacity, with our beers pouring at local bars and stocking bottleshops across Melbourne. We’re working towards opening a Northside cellar door at our Thomastown brewery.
A decade on, the brewery looks very different from those early days in a sharehouse shed, but the idea hasn’t changed much. We’re still independent, hands-on, and love making great beer.
